Dr. William Albrecht said in 1923 that all animal health depends on soil health. For people to be healthy, we need to eat healthy food. To have healthy food, we’ve got to start with healthy soil.

The key to health is to provide our bodies, our natural defense systems, with the nutrition we need, to sustain vibrant health; and to get out the toxins that inhibit the liver and other organs from performing the vast array of functions necessary for us to sustain vibrant health.
Dr. Max Gerson said the soil is our external metabolism. Soil health, soil stewardship is fundamental to our health.
This is where composting our food waste comes in to the hologram. The food came from the soil, and to have a sustainable environment, we’ve got to return the food residuals back to the soil. Responsible composting is the missing vital link, and we must forge that link, facilitate the development of the infrastructure to responsibly compost our food residuals. Economics, the need for economy of scale, says it’s got to be on a regional basis. Much of the compost must be used to rebuild soil for growing nutritious organic produce, again, regionally, so food travels less than 200 miles from field to mouth, and ideally less than half that distance. In fact, ideal is a matter of feet and minutes from harvest to mouth.
Do you know what it is like to pick spinach, grown organically in healthy soil, and pop it in your mouth within seconds? I do! I also know what it is like to put my hands in soil teaming with earthworms, soil that had been "dead dirt" two years earlier; that I added compost to, and then added 12 -18" of leaves to in the Fall. I know what it is like to stand next to corn that has grown to over 12' tall, in compost amended soil.
I know what it is like to pick corn in my garden, husk it right there, pull off the corn ‘silk’, and eat it raw, within minutes of picking it. Until a year ago, I did not know how delicious fresh raw corn was, that there is no need to cook it, that the keys are healthy soil, and
eating it within minutes of picking it.
Despite what some people believe, chemical agriculture is a dismal failure. While they may be able to get more bushels and tons per acre, the nutritional value is grossly lacking, and the energy inputs are unsustainable. Industrialized chemical agriculture is exploiting the soil, and is unsustainable.
NOW is the time to re-connect the Circle of Life.
E Coli 0157 is often a problem at feedlots, where the animals are being fed grains, when their natural diet is grass. If those animals are put out on pastures of healthy grasses, the E-Coli 0157 clears up within a couple of weeks. The natural diet of healthy grasses, grown organically, in healthy soil, enables the animal’s natural immune and other systems to re-create vibrant health. Organic agriculture does not have a problem with E-Coli 0157 or other such dis-ease organisms, which are symptoms of being massively out of harmony with nature.
Healthy soil contains a vast array of soil micro-organisms which cycle nutrients and perform many functions which we cannot duplicate with chemicals. Chemical fertilizers, pesticides and herbicides are toxic to these micro-organisms. Earthworms are awesome stewards of the soil and naturally do what man and his fossil fuel guzzling machines can’t come close to doing. Mechanically tilling the soil and applying chemicals kill the earthworms and destroy the soil food web. Then the crops, regardless of the tons and bushels per acre are nutritionally deficient.
The evidence is clear and compelling that the key to re-creating vibrant health starts with rebuilding the health of the soil, rebuild the organic content and soil food web, so the soil can yield the nutritious food we need to re-create vibrant health in our own bodies and lives.
